Golden and saffron-infused rice create a base for shrimp and salmon coated in a glossy and creamy sauce. Enjoy the flavors and experience of a fine-dining sushi restaurant at home.

Ingredients

For rice:

1 cup short-grain rice

1 cup water


1/4 cup lemon juice

2 Tbsp. unsalted butter

For sauce:

1/2 cup mayonnaise

2 Tbsp. honey





To assemble:

1 (8 oz.) salmon fillet, skin removed, cubed

8 oz. peeled and deveined shrimp, quartered

4 green onions, sliced



Salmon caviar, to garnish (optional)

Small toasted nori sheets, to serve

Directions

Step 1: Prepare rice

In a medium pot over high heat, combine rice, water, and Saffron Salt and bring to a boil. Reduce the heat to low, cover, and cook for 10 to 12 min. until water has been absorbed and the surface of the rice is dimpled. Remove from heat and leave covered for 10 min. Stir in lemon juice and butter.

Step 2: Prepare sauce

In a medium bowl, combine ingredients and stir until smooth. Pour half into a small bowl and chill until ready to serve.

Step 3: Assemble & bake

Preheat oven to 450 degrees. Grease an 8 x 8 baking dish, add cooked rice, and spread into an even layer. Add salmon and shrimp to medium bowl with remaining sauce and toss to coat. Spread salmon mixture over rice. Bake for 12 to 13 min. just until shrimp is firm.

Step 4: Garnish & serve

Garnish dish with green onions, sesame seeds, caviar, and drizzle with reserved sauce. Cut and serve portions with nori like small tacos.
