Ingredients

Brown sugar, Cambodian Lemongrass Curry (chiles, lemongrass, shallots, salt, onion, garlic, black pepper, ginger, galangal root, makrut lime leaves, citric acid), shiitake mushrooms, Thai Green Curry (chiles, galangal root, coriander, cumin, shallots, garlic, cilantro, lemongrass, makrut lime leaves, black pepper), red bell pepper, salt, citric acid, lemongrass, makrut lime leaves

Thai Coconut Curry Soup Recipe

INGREDIENTS:

1 package Thai Coconut Curry Mix
3 cups chicken broth
1 lb. boneless, skinless chicken thighs
1 (13.5 oz.) can coconut milk

DIRECTIONS:

In a medium pot, stir Thai Coconut Curry Soup Mix into chicken broth and add chicken thighs. Bring to a simmer over medium heat. Reduce heat to medium-low, cover, and cook for 20 to 25 min., or until chicken is cooked through. Remove chicken thighs from pot and slowly stir in coconut milk. Shred chicken using two forks and add back to pot. Serve hot.

NOTES:

Serve with: Cilantro, sliced scallions, and lime wedges.
