Recipe: Adobo Rice
This quick side dish can take your rice and beans to a whole new level of flavor.
- 1 to 2 cups cooked rice*
- 1 Tbsp. choice of adobo seasoning:
- Mexican Adobo Style
- Lodo Red Adobo
- La Plata Peak Adobo Spice
- 1 Tbsp. unsalted butter*
- juice and zest of 1 lime (or to taste)
- 1 Tbsp. Dried Cilantro (or 2 Tbsp. fresh minced cilantro)
*Try boil-in-bag rice for a quick meal. To make vegan Adobo Rice, use coconut oil or vegan butter alternative of choice. For a salt-free dish, use the salt-free Mexican Adobo Style seasoning.
Choose an adobo seasoning and stir it into the cooked rice with remaining ingredients. Serve warm.
Serve as a side with your favorite Mexican meal. Use as a base for a Southwestern rice salad.
