Author's Note: "I've been making all our bread since 2001 and most of it since 1993. Lately I've been trying some of the special flours and find Spelt suits me really well. Ajowan has just that special taste to set it off to perfection!"



This recipe requires a bread machine.


Set machine in dough mode and load everything except the optional ingredients. Once the machine ends the first mixing cycle and before the second starts, add the optional ingredients (if using). Once dough mode is complete, load the dough (which should be fairly sticky and damp) into a loaf pan and let rise for 1 hour. Bake in an oven preheated to 400 degrees for about 17 min. or until bread is golden and sounds hollow when tapped. Remove from oven, release from pan, and let cool completely before slicing.
