Apple-Carrot Quick Pickle Recipe

INGREDIENTS
- 1 tart apple (like a Granny Smith), peeled, cored, and sliced very thin
- 1 sweet apple (like a Gala), peeled, cored, and sliced very thin
- 3 medium carrots, peeled and shaved into strips with a vegetable peeler
- 1 1/2 cups apple cider vinegar
- 3/4 cup water
- 1/2 cup sugar
- 1 Tbsp. Pickling Spice

DIRECTIONS
Place apples and carrots in a heatproof bowl. Mix vinegar, water, sugar, and Pickling Spice in a medium saucepan. (Tip: If you don’t want Pickling Spice pieces floating in your quick pickles later, place spices in a muslin bag or tie them into a piece of cheesecloth.) Bring mixture to a boil, stirring to dissolve sugar. Pour hot mixture (including spices) over apples and carrots. Let sit for 30 min. at room temperature, or until cooled. Transfer to a quart-size jar, cover, and refrigerate until chilled. Best served after 24 hours in the fridge.
SERVING SUGGESTIONS
Serve atop any of your other favorite burgers, toss into salads, or use as a condiment in sandwich wraps.
