Avery’s Cherry-Lime “Mocktail” Recipe

INGREDIENTS
- 1/2 cup water
- 3/4 cup * Vanilla Bean Sugar
- 1/2 cup dark red pitted cherries (fresh or frozen)
- 1/4 cup * Natural Key Lime Extract
- 1/8 cup * Natural Cherry Extract
- 1 lime, cut into 8 wedges
- ice cubes
- club soda or seltzer water
- Fresh mint leaves for garnish

DIRECTIONS
Place water and 1/2 cup of the sugar in a saucepan. Bring to a boil over medium-high heat, stirring constantly to dissolve sugar. Once boiling, add cherries and reduce heat to medium-low. Cook for 5 min. to soften cherries. Once soft, gently smash cherries against the side of the pan with a large spoon. Remove from heat and stir in both extracts. Strain syrup into a clean jar, pressing on the cherries to get out as much liquid as possible; discard cherries (or eat!). Seal jar and set over ice water until cool, about 5 min.
Meanwhile, prepare 4 “mocktail” glasses: Place remaining 1/4 cup sugar in a wide bowl. Rub 1 wedge of lime around the rim of each glass. Dip rim of glasses in sugar to coat. Place a handful of ice cubes in each glass then add 3 to 4 Tbsp. cooled cherry syrup and top with club soda. Garnish each glass with a wedge of lime and fresh mint leaves.
