Balsamic Onion Jam Recipe
YIELD
About 2 cups
INGREDIENTS
- 4 large sweet onions, sliced
- 4 cloves garlic, minced
- 1 Tbsp. clarified butter or ghee
- 1 tsp. Kosher Salt
- 1/2 cup balsamic vinegar
- 1 1/2 Tbsp. brown sugar
- 1 tsp. Barnegat Bay Butcher's Rub

DIRECTIONS
Saute the onions, garlic, and salt in butter over medium heat until onions are tender and browned. Scrape the bottom of the pan with a flat wooden spoon and deglaze with small splashes of water if needed. Add seasoning, balsamic vinegar, and sugar. Allow to simmer until the liquid is evaporated, about 10 min.
SERVING SUGGESTIONS
For a great appetizer, serve on toast points or crackers with cream or goat cheese and topped with a thin slice of steak.
