Sweet fried plantains pair perfectly with the complex warm spices and citrus notes of our Sweet Jerk Barbecue Sauce.

INGREDIENTS
  • Canola oil, for frying
  • 4 ripe plantains, peeled and sliced diagonally into 1-inch thick pieces*
  • 1 cup Sweet Jerk Barbecue Sauce

NOTES

*Plantains should be yellow and black in color. if they are still a little green, let them ripen for a few more days before using.



DIRECTIONS

In a large skillet, heat about 1/2 inch of oil over medium-high heat. When oil is shimmering, add plantain slices, working in batches if needed. The oil should be hot enough that it bubbles around the pieces of plantain. Fry for 3 to 4 min. per side or until golden brown. While plantains fry, add Sweet Jerk to a small pan and heat over medium-low until sauce comes to a simmer and thickens slightly. Use tongs to remove plantains from skillet, gently shake off excess oil, and add to sauce. Gently toss until fully coated and serve hot.



SERVING SUGGESTIONS

Serve with shredded meat, cilantro rice, and/or red beans.
