Recipe: BBQ Arugula & Peach Salad
A super simple salad, perfect for a late summer lunch. The dressing is made from our Woody's Sweet & Tangy Barbecue Sauce, which contains the sweet and warm Georgia Peach Spice.
- 1/4 cup Woody’s Sweet & Tangy Barbecue Sauce
- 1 tsp. balsamic vinegar
- 1 Tbsp. olive oil
- 4 cups arugula
- 1 (4 oz.) log goat cheese, crumbled
- 2 peaches, sliced
For dressing: Whisk all ingredients together. Serve on salads immediately or store in refrigerator for up to 1 week.
For salad: Place 1 cup of arugula on 4 plates and top with crumbled goat cheese and sliced peaches. Drizzle with dressing and enjoy.
To add some protein to this salad, add grilled chicken or tofu.
