Cherry Glazed Brisket Bites Recipe

- 4 to 5 lbs. beef brisket
- Kosher salt, to season
- 1 cup cherry preserves
- 5 Tbsp. Woody's Sweet & Tangy Barbecue Sauce

Freeze half of the brisket and halve remaining ingredients if cooking for a smaller crowd.
DIRECTIONS
Preheat oven to 300 degrees. Cut brisket into 1-inch strips against the grain of the muscle. Cut strips into 1-inch cubes. Season cubes with salt on all sides to taste and spread into a single layer in a large baking dish. You may need to divide the brisket between two baking dishes to avoid overcrowding. Loosely cover baking dish(es) with aluminum foil. Bake for 2 hours. Meanwhile, mix cherry preserves and barbecue sauce in a medium bowl. Remove brisket from oven, uncover, and use half of the cherry glaze to brush each piece. Return brisket to oven and bake, uncovered, for 5 to 10 min., or until glaze has thickened and begun to caramelize. Remove from oven and brush with remaining glaze. Serve immediately.
SERVING SUGGESTIONS
These make a great appetizer and can be kept warm in a slow cooker.
