This colorful pizza is perfect for any weeknight dinner!


YIELD

INGREDIENTS
  • For chicken:

  • 1 whole bone-in, skin-on chicken breast*
  • Olive oil, to drizzle
  • Salt & pepper, to season
  • For sauce:

  • 1 Tbsp. olive oil
  • 2 garlic cloves, minced
  • 1 Tbsp. tomato paste
  • 2 cups tomato puree
  • 3 Tbsp. Family Style Fajita Seasoning
  • For veggies:

  • 2 Tbsp. olive oil
  • 1/2 red bell pepper, thinly sliced
  • 1/2 orange bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 2 garlic cloves, minced
  • Salt & pepper, to season
  • To assemble:

  • 1 (16 oz.) fresh pizza dough (premade or homemade)
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • Chopped cilantro, to garnish

This recipe is also great with leftover shredded chicken.



DIRECTIONS

For chicken: Preheat oven to 350 degrees. Place chicken breast on baking sheet, drizzle with oil, and season with salt & pepper. Roast for 35 min., or until cooked to an internal temperature of 160 degrees. Remove and let cool. Once cool enough to handle, shred chicken meat with a fork and set aside.

For sauce: Heat oil in medium saucepan over medium-high heat. Add garlic and saute until fragrant. Stir in tomato paste and cook for a minute to toast. Add tomato puree and Family Style Fajita Seasoning and bring mixture to a simmer. Cook for 10 min., stirring occasionally, then remove from heat and set aside.

For veggies: Heat oil in large saute pan over medium-high heat. Add peppers, onion, and garlic. Saute until onions are translucent, about 4 to 5 min. Season with salt and pepper. Remove from heat and set aside.

To assemble: Turn oven temperature up to 400 degrees. Place pizza stone in oven to preheat for one hour for best results. Allow pizza dough to come to room temperature so it will be easier to work with. Roll pizza dough to a 13-inch diameter on a floured surface. Remove pizza stone from oven and carefully place dough on top. Lightly cover the bottom of the pizza with the sauce. Sprinkle on chicken, sauteed veggies and cheese. Bake until crisp and golden, about 20 min. Sprinkle with cilantro, cut into slices, and serve.
