Citrus & Savory Brining Spices (Salt-Free) Recipe
- 5 oz. Coriander Seeds
- 5 oz. Minced Garlic
- 2 oz. Minced Lemon Peel
- 1 oz. Cracked Black Malabar Pepper
- 1 oz. Jamaican Allspice Berries
- oz. Dehydrated Minced Orange Peel
- oz. Turkish Bay Leaves

This zesty blend will infuse your brine with a delightful flavor. Great for brining chicken, turkey, goose, pork, or shrimp. You'll need 4 Tbsp. brining spices, 1 cup kosher salt, and 1/2 cup sugar (optional) per 1 gallon of water to create a brine for your protein of choice. To determine how much water is needed to create a brine for your chosen protein, place protein in a container large enough to hold it and measure the amount of water it takes to fully submerge it. Quick tip: Add more flavor to your brine by substituting some of the water with beer, wine, apple juice or cider, citrus juice, broth or stock, soy sauce, tea, or flavored vinegar.
