Recipe: Curried Couscous Pilaf
This is a fun recipe to explore with any of your favorite curry blends.
Melt butter in a wide skillet over medium heat. Add couscous and stir constantly for 5 min. until couscous is slightly browned, toasted and fragrant. Stir in 2 tsp. of the curry seasoning and 1/4 tsp. of the salt. Slowly pour in boiled water and stir until bubbling subsides. Remove from heat, cover and let sit for 7 min. Remove cover, fluff couscous with a fork and stir in nuts and fruit. Taste and add remaining 1 tsp. curry seasoning and 1/4 tsp. salt if desired. Serve warm or at room temperature.
Great with grilled meat or fish. Makes a unique side for holiday turkey or ham.
