This is a fun recipe to explore with any of your favorite curry blends.

INGREDIENTS
  • 2 Tbsp. unsalted butter
  • 1 cup couscous
  • 3 tsp. choice of curry powder:
  • Vadouvan
  • Zanzibar Curry Powder
  • Caribbean Curry Powder
  • 1/2 tsp. sea salt
  • 2 cups boiled water
  • 1/2 cup mixed chopped nuts (e.g. almonds, cashews)
  • 1/2 cup mixed chopped dried fruit (e.g. apricots, cherries)


DIRECTIONS

Melt butter in a wide skillet over medium heat. Add couscous and stir constantly for 5 min. until couscous is slightly browned, toasted and fragrant. Stir in 2 tsp. of the curry seasoning and 1/4 tsp. of the salt. Slowly pour in boiled water and stir until bubbling subsides. Remove from heat, cover and let sit for 7 min. Remove cover, fluff couscous with a fork and stir in nuts and fruit. Taste and add remaining 1 tsp. curry seasoning and 1/4 tsp. salt  if desired. Serve warm or at room temperature.



SERVING SUGGESTIONS

Great with grilled meat or fish. Makes a unique side for holiday turkey or ham.
