Curried Couscous Pilaf Recipe

INGREDIENTS
- 2 Tbsp. unsalted butter
- 1 cup couscous
- 3 tsp. choice of curry powder:
- Vadouvan
- Zanzibar Curry Powder
- Caribbean Curry Powder
- 1/2 tsp. sea salt
- 2 cups boiled water
- 1/2 cup mixed chopped nuts (e.g. almonds, cashews)
- 1/2 cup mixed chopped dried fruit (e.g. apricots, cherries)
Add all Savory items to cart
DIRECTIONS
Melt butter in a wide skillet over medium heat. Add couscous and stir constantly for 5 min. until couscous is slightly browned, toasted and fragrant. Stir in 2 tsp. of the curry seasoning and 1/4 tsp. of the salt. Slowly pour in boiled water and stir until bubbling subsides. Remove from heat, cover and let sit for 7 min. Remove cover, fluff couscous with a fork and stir in nuts and fruit. Taste and add remaining 1 tsp. curry seasoning and 1/4 tsp. salt if desired. Serve warm or at room temperature.
SERVING SUGGESTIONS
Great with grilled meat or fish. Makes a unique side for holiday turkey or ham.
