Recipe: Fermented Chile Hummus
Delicious hummus with an fermented chile twist, perfect for snacking with veggies.
- 4 Tbsp. Portuguese Fermented Chile Flakes
- 1 tsp. Dehydrated Minced Garlic
- 1 tsp. Kosher Salt
- Grated zest of 1/2 lemon
- 1/4 cup fresh lemon juice (about 1 lemon)
- 1/4 cup water
- 1 (15 oz.) can garbanzo beans, drained
- 1/4 cup tahini
- 2 Tbsp. olive oil
- 1 tsp. sesame oil
- Black or White Sesame Seeds, for garnish
*For a sweeter version, use 1 whole bulb Black Garlic in place of Dehydrated Minced Garlic. If using Black Garlic, no need to soak it first; simply peel and mash all cloves and add to food processor with garbanzo beans.
Mix chile flakes, minced garlic, salt, and lemon zest with lemon juice and water and set aside for 15 min. In a food processor, pulse garbanzo beans with tahini, olive oil, and sesame oil into a coarse paste. Add soaked chile mixture and process until smooth.
Serve drizzled with more olive oil and/or sesame oil and garnished with more chile flakes and/or sesame seeds.
