Flat Irons Skillet Potatoes Recipe
6 to 8 servings
- 2 Tbsp. unsalted butter
- 2 Tbsp. olive oil
- 2 lbs. Yukon Gold potatoes, large dice
- 1 1/2 Tbsp. Flat Irons Prime Rib Rub
- 1 tsp. Garlic Salt*
- 1 yellow onion, diced

*You can replace the Garlic Salt with fresh garlic and salt to taste, or leave the garlic out altogether for reduced garlic flavor.
Heat butter and oil in a large skillet over medium-high heat. Add potatoes, stirring occasionally for 12 to 15 min. Reduce heat to medium and mix in Flat Irons, Garlic Salt, and onion. Cook for 12 to 15 more min. until the potatoes have a golden crust and are cooked through. Serve immediately.
Makes a great side with steak or roast chicken. Leftovers make good breakfast potatoes with eggs, veggies, and proteins.
