Greek Lamb Sausage Pizza Recipe

INGREDIENTS

For sausage:
- 12 oz. ground lamb
- 3/4 lb. course ground pork shoulder*
- 1 small white onion, diced
- 1/2 cup dried bread crumbs
- 2 Tbsp. dried parsley
- 1 1/2 Tbsp. Limnos Lamb Rub
- 1/2 tsp. Minced Garlic
- 1/2 tsp. Coarse Black Malabar Pepper
- 2 Tbsp. olive oil

For sauce:
- 1 head garlic, roasted*
- 1/3 cup plain Greek yogurt
- 2 Tbsp. mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled feta cheese
- 2 tsp. Limnos Lamb Rub

For pizza & toppings:
- 1 large pre-cooked pizza or flatbread crust
- 2 tsp. olive oil
- 2 tsp. Cantanzaro Herbs
- 1 red bell pepper, thinly sliced
- ½ red onion, thinly sliced
- 1/2 cup pitted, halved Kalamata black olives
- 1/4 cup crumbled feta cheese
- 1/4 cup packed fresh torn basil leaves

NOTES
*The sausage works with regular ground pork, but pork shoulder is more flavorful; ask your butcher to grind it for you. To roast garlic, slice off top of head to expose cloves, sprinkle with 1 tsp. olive oil, wrap tightly in foil and roast in a 400-degree oven until soft, 30 to 40 min. When head is cool enough to handle, roasted cloves should squeeze right out.
DIRECTIONS
For sausage: Place all ingredients in a food processor and pulse until just combined. Transfer to a large bowl and finish mixing thoroughly with hands. Heat oil in a large skillet over medium heat. Add sausage mixture and sauté until browned and cooked through. Stir occasionally to break apart sausage into small ground chunks.
For sauce: Mix all ingredients until combined. Refrigerate until ready to prepare pizza.
For pizza & toppings: Preheat oven to 375 degrees. Place pre-cooked pizza crust on a large baking sheet. Brush crust with olive oil, sprinkle with Cantanzaro Herbs, and spread prepared sauce across the top. Sprinkle with cooked sausage all remaining toppings except basil. Bake for 10 to 15 minutes until heated through. Sprinkle with basil just before serving.
SERVING SUGGESTIONS
The sausage can be made into patties and frozen for use in other dishes. The sauce makes a great dip for veggies or pita chips.
