Hidden Cove “Waldorf” Chicken Salad Recipe
- 1 lb. boneless, skinless chicken breasts
- 1/2 cup mayonnaise
- 2 Tbsp. Hidden Cove Lemon Garlic Blend
- 1/2 tsp. Coarse Black Malabar Pepper
- 1/4 cup diced red onion
- 1 Granny Smith apple, diced
- 1/4 cup chopped walnuts
- 1 Tbsp. chopped fresh parsley
Add all Savory items to cart
Place chicken breasts in a medium saucepan and cover with water. Bring to a boil and simmer until chicken is cooked through, about 10 min. Drain and set chicken aside to cool. Meanwhile, mix mayonnaise, Hidden Cove and black pepper together in a small bowl. Toss remaining ingredients together in a large salad bowl. When chicken is cool, dice and add to the large salad bowl. Fold in dressing until everything is coated. Cover and chill in refrigerator for at least 30 min. before serving.
Serve cold on top of greens with a few slices of pita bread or use to make a sandwich or wrap.
