Tasty and fresh, this salad is wonderful to serve alongside lamb, falafel, or with hummus.


YIELD
4 to 6 servings

INGREDIENTS
  • 2 pita breads, cut into 8 pieces
  • 1/2 cup extra virgin olive oil
  • 4 Tbsp. lemon juice
  • 4 tsp. Za'Atar Seasoning
  • 2 scallions, thinly sliced
  • 1/2 tsp. garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. Coarse Black Malabar Pepper
  • 3 large tomatoes, seeded and chopped
  • 1 Tbsp. fresh parsley, chopped

Add all Savory items to cart


DIRECTIONS

Preheat oven to 350 degrees. Place pita slices on a cookie sheet and toast for 12 min. Remove from oven and reserve. To make vinaigrette, whisk together olive oil, lemon juice, Za’atar, garlic, salt and pepper. In a large bowl, combine all ingredients and let sit 10 min. before serving.
