We love this simple yet creative use of lavender in a savory application.


  • 1 cup medium grain sushi rice
  • 1 1/2 cups water
  • 1/4 cup coconut milk
  • 1 Tbsp. butter
  • 1 tsp. salt
  • 1 tsp. Lavender


The Mainline in Old Town Fort Collins, CO, regularly incorporates Savory's spices into its Southern-inspired, beer friendly menu.


Combine all ingredients in a medium saucepan and bring to a boil over medium heat. Reduce to a simmer and cook for 20 min. Remove from heat and keep covered for 10 min. Fluff with a fork and serve. Should be sticky!

Serving Suggestions

Serve with seared ahi tuna and fresh avocado.

The flavor was nice. I really enjoyed the addition of lavender; however, there is too much liquid and salt. I did make these slight changes: I used 200 grams of sushi rice, which is about a cup, rinsed; lite coconut milk; and coarse kosher salt, making sure to level the scoop. My butter was unsalted. I will make this again and reduce the water by 1/4 cup. The end of the directions are a bit strange; sticky rice cannot be fluffed!
