Recipe: Mediterranean Spiced Cucumber Medallions
Make veggies and dip a little more special with this pretty presentation for a party appetizer.
- 4 oz. Chevre goat cheese
- 1/4 cup Greek yogurt
- 1/4 red bell pepper, chopped (reserve remaining pepper for garnish)
- 1 Tbsp. Mt. Olympus Greek Style Seasoning
- 1 English cucumber, sliced into 1/2-inch rounds
Place goat cheese, yogurt, 1/4 red bell pepper and Mt. Olympus in a food processor and puree until smooth. Place the goat cheese mixture into a plastic zip-top bag and cut a small hole in the corner. Lay out the cucumber slices and squeeze a dollop of mixture onto each one. Thinly slice or chop remaining bell pepper and sprinkle to garnish.
