Oatmeal Cookies Recipe

INGREDIENTS
- 2 cups quick oats
- 1 1/3 cups flour
- 1 Tbsp. your choice of baking spice:
- Pie Spice
- Mt. Baker Chai Seasoning
- Pumpkin Pie Spice
- 3/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 sticks unsalted butter, softened
- 1/2 cup dark brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp. Pure Madagascar Vanilla Extract

DIRECTIONS
Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside. Combine oats, flour, Pie Spice, baking soda, baking powder, and salt. Set dry mixture aside. In a separate bowl, cream butter and sugars. Add eggs (one at a time) and vanilla, mixing well after each addition. Add dry mixture, a little at a time, until fully incorporated. Use a tablespoon to scoop dough and form into rounded balls. Place on prepared baking sheets, about 2 inches apart. Bake for 13 to 15 min., or until golden brown, rotating halfway through baking. Cool completely on a wire rack.
