DIRECTIONS

Preheat oven to 350 degrees. Toss Brussels sprouts with canola oil and 1 Tbsp. Pike Place Protein Rub in a medium bowl and set aside. Heat a large cast iron skillet over medium-high heat, add bacon, and sauté for 4 to 5 min., or until lightly browned and crispy. Remove bacon from pan with a slotted spoon and set aside. Immediately add Brussels sprouts to pan, toss them in bacon drippings, and transfer pan to oven. Roast for 20 to 25 min., or until cooked through with crispy edges. Top with bacon, pieces of goat cheese, and remaining 1 Tbsp. of Pike Place Protein Rub.



SERVING SUGGESTIONS

Serve as a side with lamb, steak, or a roast.
