DIRECTIONS

Preheat oven to 475 degrees. Place eggs in a wide, shallow bowl and season with salt and pepper. In another bowl, combine panko, choice of spice, and oil. Dip tilapia strips in egg, then press into panko mixture to adhere. Place on baking sheets lined with foil. Bake until lightly browned, about 12 to 15 min.



SERVING SUGGESTIONS

Serve with tartar sauce or dust fish sticks with a little cayenne pepper for a spicy bite!
