Recipe: Saffron Brined Shrimp
An elegant shrimp recipe that is complex in flavor and simple in process.
- 1 lb. shrimp, peeled and deveined
- Cold water, to cover shrimp
- 1 Tbsp. Saffron Salt*
- 1 Tbsp. vegetable oil (for grilling)
If using frozen shrimp, defrost before brining.

Place shrimp in a bowl and cover with cold water. Add Saffron Salt and stir until salt is dissolved. Refrigerate shrimp in brine for a minimum of 1 hour and up to 24 hours. Longer brining time will deepen the golden color. Drain brining liquid and grill, saute, or bake.
To grill: Skewer shrimp, brush with vegetable oil, and grill for 3 to 4 min. per side. Serve immediately.
Cook with cherry tomatoes, onion, and/or zucchini (or thread onto skewers with shrimp before grilling) and serve over rice for a complete meal.
