Saffron Maple Granola Recipe

INGREDIENTS
- 1 1/2 cups rolled oats
- 1 cup whole pecans
- 1/2 cup shelled pistachios
- 1/2 cup macadamia nuts
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1 tsp. Saffron Salt*
- 1/4 cup dried apricots, sliced
- 1/4 cup dried cranberries

DIRECTIONS
Preheat oven to 200 degrees. Mix oats and nuts in a large bowl. Melt coconut oil in a saucepan over medium heat. Remove from heat and combine with maple syrup and salt. Pour oil mixture over the dry mixture and stir to evenly coat. Spread the granola on a baking sheet. Bake for 30 min, stirring every 15 min. Toss granola mixture with apricots and cranberries. Allow the granola to cool completely before storing in an airtight container.
