Saffron Salted Apricot Blondies Recipe

- 1/2 cup (1 stick) unsalted butter
- 1/2 tsp. Saffron Salt, plus more to sprinkle*
- 1/8 tsp. Ground Inner Cardamom Seeds (optional)
- 1 cup (packed) light brown sugar
- 1 egg
- 1 cup all-purpose flour
- 1/2 cup dried apricots, minced
- 1/2 cup pecans, chopped small

Preheat oven to 350 degrees. Melt butter with Saffron Salt and cardamom in a small saucepot over medium-low heat. Pour into a medium bowl and stir in brown sugar. Stir in egg until thoroughly incorporated (if butter and sugar mixture is hot, let cool for about 5 min. before stirring in the egg so it doesn't curdle). Fold in flour, apricots, and pecans. The mixture will be very thick. Spoon the batter into an 8-inch square pan lined with parchment paper. Spread mixture evenly and sprinkle generously with Saffron Salt. Bake for 25 to 30 min., or until a toothpick inserted into the middle of the blondies comes out clean. Let cool completely in the pan before cutting and serving.
