NOTES

*You can use toasted sesame seeds and ground cumin instead, but we like the flavor impact of toasting and grinding the seeds fresh.

DIRECTIONS

Toast sesame seeds and cumin seeds together in a small skillet over medium heat for 1 to 3 min. or until fragrant. Immediately transfer to a food processer or blender. Blend to desired consistency; pulse just a few times for a coarse grind, or for 30 seconds or so for a finer texture. Add garbanzo beans, garlic, lemon juice and water and blend until smooth. With blender running, slowly drizzle in oil until hummus reaches desired consistency. Sprinkle with sumac and a drizzle of olive oil just before serving. Store in the refrigerator and use with a week or so.

SERVING SUGGESTIONS

Top (but do not mix in) with favorite salsa, chopped olives, bruschetta, sundried tomatoes, pine nuts, pomegranate seeds, or a mixture of paprika and Za’Atar Seasoning. Serve with pita chips, flat bread, pita bread, veggies, etc.
