Simple Syrup: Allspice-Bay Recipe

INGREDIENTS
- 1/2 cup sugar
- 1 cup water
- 1 Tbsp. Jamaican Allspice Berries
- 1 Tbsp. California Bay Leaves, crushed

DIRECTIONS
Whisk sugar and water together in a small saucepan. Bring mixture to a boil, stirring to make sure sugar dissolves, and cook for 1 to 2 min. Remove from heat and add allspice berries and bay leaves. Cover and allow mixture to steep until room temperature, about 20 min. Strain and store in a sealed container in the refrigerator. (Strain spices from syrup if desired, or leave them in container and they will continue to flavor the syrup.) Use within 2 weeks.
SERVING SUGGESTIONS
Mix 1 Tbsp. syrup with 8 oz. club soda, seltzer water or sparkling wine. Use in our Strawberry-Basil “Mojito”, Blackberry Fizz, Peach Sangria or Strawberry-Basil Spinach Salad with Allspice-Bay Poppy Seed Dressing recipes.
