Slow Cooker Bourbon BBQ Beans Recipe

INGREDIENTS
- 4 (15 oz.) cans white beans
- 7 slices thick-cut bacon
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 cups chicken broth or stock
- 1 cup bourbon
- 1/2 cup packed dark brown sugar
- 1/2 cup ketchup
- 1/4 cup yellow mustard
- 1/4 cup molasses
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. Worcestershire Sauce
- 2 tsp. hot sauce
- 2 Tbsp. cornstarch
- 1 tsp. Crushed Brown Mustard Seeds
- 1 tsp. Coarse Black Malabar Pepper
- 1 tsp. Smoked Spanish Sweet Paprika
- 2 Tbsp. your choice of BBQ rub:

Recipe adapted from the How Sweet It Is blog’s Crockpot Bacon Bourbon Baked Beans recipe.*Replace Smoked Spanish Sweet Paprika with Smoked Spanish Hot Paprika to add even more heat.
DIRECTIONS
Drain and rinse beans and set aside. Slice bacon into strips and cook in a skillet over medium-high heat until crispy. Transfer bacon to a paper towel-lined plate. Drain all but 3 Tbsp. bacon grease from the skillet. Cook onion and garlic in bacon grease over medium heat until soft, 5 to 7 min. Meanwhile, add remaining ingredients except beans to the slow cooker. Whisk everything together then add beans, bacon, and onion-garlic mixture. Stir to combine, cover, and cook on low for 8 hours. After 8 hours, mixture will be soupy; turn the heat off but keep slow cooker covered for 30 min. to 2 hours to thicken beans before serving.
