Directions

Combine kale, salt, paprika, vinegar, and maple syrup. "Massage" the kale with your hands for 30 seconds to help season the kale and neutralize any bitterness. Toss in sliced peaches, onion, and poppy seeds. Let salad sit for 30 min. to allow for flavors to meld. Garnish with a sprinkle of poppy seeds and serve.

I hesitate with the number of stars I give this recipe because I did not put in as much smoked paprika as is called for. Instead, I halved the amount because I suspected it would be too much. I am glad I followed my intuition. I love this combination of ingredients. This salad is so tasty. The dressing is delicious without the paprika, too. This is a keeper and I will make it again. I have a question about the double listing of onion. I assume it was accidental and so I only used 1/2 cup of red onion.
