Recipe: Smoky Kale Salad
A smoky and sweet salad that has the perfect freshness for pairing with grilled or barbecued dishes.
- 6 cups chopped kale
- 6 Tbsp. apple cider vinegar
- 2 Tbsp. maple syrup
- 2 Tbsp. Smoked Spanish Sweet Paprika
- 1 tsp. salt
- 2 peaches or red apples, thinly sliced
- 1/2 red onion, thinly sliced
Combine kale, vinegar, maple syrup, paprika, and salt. "Massage" the kale with your hands for 30 seconds to help season the kale and neutralize any bitterness. Toss in sliced fruit and onion. Let salad sit for 30 min. to allow flavors to meld before serving.
This salad goes well with barbecue like pulled pork sandwiches.
