Sweet Chile Saffron Wings Recipe

INGREDIENTS
- 4 lbs. chicken wings
- 2 Tbsp. baking powder
- 1 Tbsp. Saffron Salt
- 1/2 cup butter
- 2 Tbsp. Crushed Red Pepper Flakes
- 1 Tbsp. Ground Ginger
- 1/2 cup maple syrup
- 1/4 cup lime juice
- 1 tsp. salt
- 1 tsp. black pepper

DIRECTIONS
Preheat oven to 250 degrees. Toss wings with baking powder and 1 Tbsp. Saffron Salt. Line a baking sheet with foil. Set a baking rack on top of baking sheet. Cook wings for 30 min. Without removing wings from oven, increase to 425 degrees. Cook an additional 40 min. until chicken is light brown and crispy. Meanwhile, combine butter, red pepper, ginger, maple syrup, lime juice, pepper, and remaining 1 tsp. Saffron Salt in a small saucepan. Bring sauce to a simmer over medium heat, then reduce heat and cook for 3 to 4 min., stirring occasionally until sauce begins to thicken slightly. Toss wings with sauce and return to oven for 10 min. Toss wings with any remaining sauce and serve.
