Super easy slaw with tons of curried flavor!

INGREDIENTS
  • 1 (16 oz.) package slaw mix
  • 1/4 cup chopped cilantro
  • 1/4 cup thinly sliced scallion
  • 1/2 red bell pepper, thinly sliced
  • 3 Tbsp. lime juice
  • 3 Tbsp. rice wine vinegar
  • 1 Tbsp. sesame oil
  • 4 Tbsp. canola oil
  • 2 Tbsp. honey
  • 1 Tbsp. Thai Green Curry
  • salt and pepper to taste

NOTES

Recipe also works well with our Red Thai Curry.



DIRECTIONS

Place first 4 ingredients in a large bowl and toss to combine. Whisk together remaining ingredients in a separate small bowl. Pour dressing over slaw mixture, cover and set in refrigerator for at least an hour before serving, stirring periodically.



SERVING SUGGESTIONS

Serve as a side or topping with burgers, pulled pork, chicken sandwiches or your favorite grilled meat.
