INGREDIENTS

  • 2 lbs. skirt steak, sliced against the grain into thin strips
  • Salt, to season
  • 6 Tbsp. finely ground peanuts
  • 1 1/2 Tbsp. Tsire West African Spice
  • 1 red bell pepper, cut into large chunks
  • 2 scallions, sliced

NOTES

DIRECTIONS

Season skirt steak with salt. In a small bowl, combine peanuts and Tsire West African Spice. Coat skirt steak with peanut mixture, pressing to adhere. On metal or presoaked wood skewers, alternate adding skirt steak in an S-pattern and pieces of bell pepper. Preheat grill or grill pan over high heat. Grill skewers for 3 to 5 min. per side until lightly charred and cooked to desired doneness. Garnish with scallions.
