Tuscan Pork Tenderloin Recipe

INGREDIENTS
- 1 Tbsp. vegetable or canola oil
- 2 lbs. pork tenderloin
- 3 Tbsp. Choice of seasoning:
- Coastal Cali Fennel Pollen Rub
- Barnegat Bay Butchers Rub
- Cuban Island Spice
- 3 slices bacon
- 1 French baguette, similar in size to pork tenderloin

DIRECTIONS
Preheat oven to 375 degrees. Heat oil in a large pan over medium-high heat. Sear pork tenderloin on all sides. Remove from heat, coat in spice blend, and wrap bacon around the tenderloin (it will not cover the pork entirely). Slice into the side of baguette and pull out enough of the inside to make room for the tenderloin. Place the tenderloin into the baguette and bake for 25 to 30 min or until internal temperature reaches 155 degrees. Let rest for 5 minutes before cutting it into 1-inch slices.
SERVING SUGGESTIONS
Serve with salad or pasta. If you used Cuban Island Spice serve it with rice and black beans for a full Cuban-inspired meal.
