Memphis BBQ Rub
Memphis BBQ Rub: Brown and white sugar, paprika, kosher salt, garlic, onion, cumin, black pepper, chiles, coriander, ginger, thyme, rosemary, Mexican oregano
Longs Peak Pork Chop Spice: Salt, garlic, onion, black pepper, shallot, ginger, hickory smoked salt, hickory smoked flavoring, regular mustard powder, crushed brown mustard seed
TSM Kansas City BBQ Rub: Brown and white sugars, salt, California paprika, hickory smoke salt, black pepper, mustard, onion, celery, ginger allspice, cayenne, garlic, turmeric, red bell pepper, spices
Park Hill Maple Pepper: Maple sugar, white sugar, black pepper, coriander, turmeric, ginger, nutmeg, fenugreek, anise seed, cumin, Saigon cinnamon, regular mustard powder, mace, cardamom, minced green onion
5 Tbsp. Park Hill Maple Pepper
6 Tbsp. balsamic vinegar
1/4 cup whole grain Dijon mustard
1 Tbsp. olive oil
Mix all ingredients together thoroughly. Use to baste pork, chicken, or salmon before or during cooking.
For a ham glaze, add 1/2 cup maple syrup or brown sugar to mixture and spread evenly over a 7 to 9 lb. ham during the last hour of cooking. Double or triple the recipe to have extra to serve as a sauce on the side.
