Cherry Creek Seafood Seasoning: Salt, lemon peel, black, white, and green peppercorns, red bell pepper, dill weed, cracked dill seed, onion and citric acid
Pearl St. Plank Salmon Rub: Maple sugar, smoked Spanish sweet paprika, salt, chiles, garlic, yellow mustard powder
Capitol Hill Seasoning: Shallots, salt, pepper, dill weed, parsley, chives
Coastal Cali Fennel Pollen Rub: White sugar, kosher salt, orange peel, coriander, California paprika, ground fennel, granulated onion, granulated garlic, fennel pollen, Aji Amarillo chiles
2 Tbsp. olive oil
2 cloves garlic, chopped
2 Tbsp. Coastal Cali Fennel
1/4 cup dry white wine
1/2 lemon, juiced
2 Tbsp. cold butter, cut into cubes
Heat olive oil in a small skillet over medium-low heat. Add garlic and cook, stirring, for 2 min. Stir in Coastal Cali and cook for about 1 min. Add wine and simmer over medium-low to low heat until reduced by half. Stir in lemon juice. Remove from heat. Add butter cubes and swirl in pan until incorporated.
SERVING SUGGUSTIONS: Serve as a dipping sauce for grilled shrimp and scallops or steamed crab legs and lobster.
