Thai Coconut Curry Soup
INGREDIENTS:
1 package Thai Coconut Curry Soup Mix
3 cups chicken broth
1 lb. boneless, skinless chicken thighs
1 (13.5 oz.) can coconut milk
DIRECTIONS:
In a medium pot, stir Thai Coconut Curry Soup Mix into chicken broth and add chicken thighs. Bring to a simmer over medium heat. Reduce heat to medium-low, cover, and cook for 20 to 25 min., or until chicken is cooked through. Remove chicken thighs from pot and slowly stir in coconut milk. Shred chicken using two forks and add back to pot. Serve hot.
SERVING SUGGUSTIONS: Serve with: Cilantro, sliced scallions, and/or lime wedges
