Chile Powder, Mild Green, New Mexican
This green chile powder is made with the finest New Mexico # 6-4 variety. They are picked before ripening to red and dehydrated. The stems are then removed before being powdered into a fine and tasty mild chile powder. It takes 18 pounds of fresh green chiles to make 1 pound of dehydrated chiles, packing this powder with wonderful flavor.

These chiles are great for adding authentic flavor to New Mexican and TexMex dishes. Try using in stews, tacos, enchiladas and sauces.
Green Chile Sauce
5 tbsp. Mild Green Chile Powder
1 cup water
½ cup chicken stock or broth
1 tsp. wine vinegar
¾ tsp. granulated garlic
½ tsp. ground cumin
¼ tsp. crumbled Mexican oregano
¼ tsp. cayenne powder
Thoroughly mix all ingredients together for a tasty green chile sauce. For a spicier version, add more cayenne powder. Pour over pork, chicken or vegetables and simmer, covered, for 30-45 minutes, stirring occasionally.
Hatch, New Mexico is known as the "Green Chile capital of the World".
