Ajowan is also known as Ajwain, Bishop's Weed, Carum, Omam or Omum. It is native to India. Now it is also grown in Pakistan, Afghanistan, Egypt and Iran. Ajowan is closely related to cumin and caraway, but it contains the essential oil thymol, which gives it a stronger, yet similar taste to thyme.
Thymol also is used in medicines that sooth throat irritations and reduce coughs. Ajowan is particularly suited to vegetarian fare and goes best with legumes, breads, root vegetables and fish. These dry seeds keep indefinitely.
