*For different flavor options, try using almond extract or vanilla extract instead of coconut extract. You can also use soy milk, almond milk or regular milk instead of coconut milk. Another way to change up the flavor is to add ½ to 1 tsp. of cinnamon, cayenne or peanut butter.
Slice avocado in half, remove the pit, scoop out the fruit and add it to a blender or food processor with the rest of the ingredients. (Tip: Start with 1 tsp. extract and stir in more to taste once you’ve blended the mixture.) Blend until smooth. You may need to stop a few times and scrape down the sides of the blender. Add a bit of additional milk if necessary to achieve desired consistency. Serve right away or cover and refrigerate until ready to serve.
Garnish with toasted coconut, sliced almonds or chopped peanuts depending on the flavor option you go with.
