Chocolate Avocado Pudding

The avocado complements the black onyx cocoa for a pudding that looks and tastes like the real thing. It’s even dairy free. There are also a few flavoring options to take the dish in different directions depending on your tastes.

Ingredients
2 ripe avocados
Black Onyx Cocoa Powder
1/2 cup Black Onyx Cocoa Powder
1/2 cup maple syrup
3/4 cup coconut milk*
Natural Coconut Extract
1 to 2 tsp. Natural Coconut Extract
Directions
Slice avocado in half, remove the pit, scoop out the fruit and add it to a blender or food processor with the rest of the ingredients. (Tip: Start with 1 tsp. extract and stir in more to taste once you’ve blended the mixture.) Blend until smooth. You may need to stop a few times and scrape down the sides of the blender. Add a bit of additional milk if necessary to achieve desired consistency. Serve right away or cover and refrigerate until ready to serve.
Recipe Notes
*For different flavor options, try using almond extract or vanilla extract instead of coconut extract. You can also use soy milk, almond milk or regular milk instead of coconut milk. Another way to change up the flavor is to add 1/2 to 1 tsp. of cinnamon, cayenne or peanut butter.
