Mapuche Style Merken Seasoning (Merquen)
Merken is a traditional Chilean seasoning created by the indigenous Mapuche people. The local version is made from Goat’s Horn chile (aji cacho de cabra), which is mildly spicy and smoky, but not nearly as strong as chipotle chiles are. That chile isn't available commercially in the US so, to achieve the correct flavor profile, we use a combination of chiles and smoked paprika. We handcraft our version of this customary Chilean seasoning by blending chile powders, coriander, smoked sweet paprika, salt and oregano.
Chiles, coriander, smoked sweet paprika, salt and oregano.
Use as a rub to flavor meats or vegetables. Mix a teaspoon into 3 tbsp of olive oil to make a flavorful bread dip. Try it in non-traditional applications by sprinkling on pizza, popcorn or baked potatoes or even to flavor drinks like Bloody Marys, Pisco Sours and Micheladas. Great for making traditional dishes like Pebre & Chancho en Piedra (Chilean salsa) and Chacarero or Lomito sandwiches.

“I was in Boulder and I made a point of stopping in your store near Pearl St. I had a terrific time. I love being able to buy small quantities of different spice mixtures/spices to try and I certainly bought my fair share on this visit.”
