Cloves, Madagascar, Whole
Native to the Molucca Islands (also known as the Spice Islands), cloves are also produced in Madagascar, Indonesia, Brazil and Zanzibar. They have an almost pungent aroma as well as a sweet and spicy flavor. Cloves are the unopened flower buds of the clove tree, which is a tropical evergreen that can live up to 100 years. Cloves resemble small brads or tacks and their name comes from the French word clov, which means nail.

During the Chinese Han Dynasty, 206 B.C. to 220 A.D., courtiers were required to hold cloves in their mouths when addressing the emperor.

We also carry ground Madagascar cloves and Ceylon cloves. Whole cloves can be used as garnishes, to stud fruit (make pomander balls), hams or onions, and for decorating gingerbread and other cookies. Although cloves aren’t called for often, they are essential to many ethnic dishes. Use caution when using cloves in a dish that is left to stand, as they can add sharpness to the flavor.
