A classic cookie that can be flavored with your favorite baking spice.

Ingredients

For cookies:

2 cups quick oats

1 1/3 cups all-purpose flour


3/4 tsp. baking soda

1/2 tsp. baking powder


3/4 cup (1 1/2 sticks) unsalted butter, room temperature

1/2 cup dark brown sugar, packed

1/2 cup granulated sugar

2 eggs


For icing:

1 1/2 cups powdered sugar

2 Tbsp. milk

Directions

Step 1: Make dough

Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside. Combine oats, flour, Baking Spice, baking soda, baking powder, and Mayan Sea Salt. Set dry mixture aside. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugars. Add eggs one at a time and Pure Madagascar Vanilla Extract, mixing well after each addition. Add dry mixture, a little at a time, until fully incorporated.

Step 2: Shape and bake cookies

Use a tablespoon to scoop dough and form into rounded balls. Place on prepared baking sheets, about 2 inches apart. Bake for 13 to 15 min., or until golden brown, rotating halfway through baking. Cool completely on a wire rack.

Step 3: Make icing

In a medium bowl, combine all icing ingredients. Adjust consistency as needed: thicken with more powdered sugar, or thin with milk. Lightly coat tops of cookies and let excess icing drip off. Dust with more Baking Spice to taste.
