Whisk honey powder and water together in a small saucepan. Bring mixture to a boil, stirring to make sure honey powder dissolves, and cook for 1 to 2 min. Remove from heat and add hibiscus and lavender. Cover and allow mixture to steep until room temperature, about 20 min. Strain and store in a sealed container in the refrigerator. Use within 2 weeks.


Mix 1 Tbsp. syrup with 8 oz. club soda, seltzer water or sparkling wine. Use in our Blackberry Sangria, Hibiscus-Lavender Limeade and Hibiscus-Lavender Gelée recipes.

I love this - it's so refreshing in soda water with a little lime juice, or in a margarita or mojito. I ran out of honey powder so just did traditional simple syrup and that was fine.
