One Mexican vanilla bean is equal to 1 Tbsp. of Mexican vanilla extract.
The robust vanilla flavor is great for rich baked goods. Try in sauces, ice cream, pastries, custard, cheesecake, and other sweet-spiced desserts.

About this Spice

The flavor of Mexican Vanilla Beans is similar to Madagascar vanilla, though they have a mellower, smooth quality and a spicy, woody fragrance. Never refrigerate or freeze as extreme cold can kill flavor enzymes in the vanilla bean. Store away from heat and sunlight in an airtight container.

Use the whole pod or cut and remove the inner seeds. The easiest way to obtain the inner seed is to split the bean lengthwise, open the bean up flat and scrape from top to bottom with the edge of a knife. No need to throw away the bean.
