The word "Creole" actually means marriage or mixture of cultures in old Spanish. Just as the Ouachita, Tensas, and Little Rivers converge to form the Black River in Louisiana, many spices from around the world converge to make this complex Creole mix.
Add to gumbo, fried catfish, crawfish or crab cakes, and pretty much any cut of meat you want to add some zing to. Use in jambalaya, to make remoulade, or sprinkle on fries.
