Air Fryer Caesar Smashed Potatoes

Perfectly baked smashed potatoes reveal all the best parts of a potato: crispy skin, crunchy edges, and a soft center. Roasting potatoes in the air fryer after a quick boil leads to perfectly cooked delights that are ready in half the time. Seasoned with bright, umami-forward Caesar Seasoning, these smashed potatoes are the perfect weeknight side dish.

Ingredients
For smashed potatoes: 1 lb. small Russet or red potatoes, quartered
Mayan Sea Salt
2 Tbsp. Mayan Sea Salt
Olive oil, to drizzle
Caesar Seasoning
Caesar Seasoning, to sprinkle
For dipping sauce:
1/2 cup sour cream
Caesar Seasoning
1 Tbsp. Caesar Seasoning
Directions
Step 1
Boil potatoes
Step 2
Place potatoes in a large pot and completely submerge in cold water. Add Mayan Sea Salt, bring to a boil, and cook for 10 to 15 min. until easily pierced to the center with a fork. Remove from heat and strain.
Step 3
Season and air fry
Step 4
Preheat air fryer to 400 degrees. Spread cooked potatoes on a sheet tray and squish with the bottom of a glass to 1/4-inch thick. Drizzle potatoes with olive oil and sprinkle generously with Caesar Seasoning. Air fry for 15 min. until potatoes are golden brown and crispy.

In a small bowl, combine sour cream and Caesar Seasoning. Serve smashed potatoes with dipping sauce.
Recipe Notes
Don't have an air fryer? Roast these in a 400 degree oven for 30 to 45 min. until edges are crispy and golden brown.
