A Journey of Flavor

When Janet and I traveled to Barbados in search of authentic Bajan seasoning, we discovered a vibrant style often called “green seasoning.” Fresh herbs, scallions, garlic, and chiles are blended into a lively paste that forms the base of many local dishes. We call our dry version Caribbean Green Jerk because it feels like the younger sibling of Jamaican Jerk. It’s just as flavorful, but greener, fresher, and more approachable. This seasoning is built on thyme, garlic, and allspice, with just enough habanero heat to wake up the dish without overwhelming it. It’s a great way to introduce anyone sensitive to spicy heat to the bold flavors of jerk – even kids! Using Green Jerk at home: For a quick paste, mix equal parts seasoning, water, and oil. For a marinade perfect for grilling, combine 6 Tbsp of seasoning with 3 Tbsp olive oil, 3 Tbsp soy sauce, 6 Tbsp vinegar, 6 Tbsp orange juice, and 4 Tbsp lime juice. Marinate chicken or pork for 4 to 12 hours before cooking for bright, herb-forward flavor.

We’ve captured those lively flavors in a dry blend so it's easy to keep nearby and ready to sprinkle whenever you want a little extra flavor.
