Having dehydrated garlic around is essential. Not only is it a wonderful flavoring agent, but this granulated garlic doesn't spoil. There is no need to re-hydrate granulated garlic. About 1/8 tsp. is equal to 1 average size clove. If you are on a low sodium diet, substitute 1/2 tsp. of salt with 1/8 tsp. garlic.
